Tonight after a snow day at home I decided to pull out my Grandmother's recipe for no bake cookies, the perfect decadent end to a restful day. There's just something about her cursive and the creases and splatters on the recipe card that is so familiar and comforting. These cookies were beloved by me growing up and requested often. Sometimes I couldn't even wait to form the dough into cookies, eating it straight out of the pan. They're the perfect dessert when you want something sweet but don't have the energy or time for anything complicated.
Grandma Joyce's No Bake Cookies
Ingredients:
2 C granulated sugar
1/4 C cocoa powder
1 cube butter
1/2 C milk
3 C quick cooking oats
1/2 C peanut butter
1 tsp vanilla
Directions:
In a saucepan bring sugar, cocoa, butter, and milk to a rapid boil for 1 minute.
Add quick cooking oats, peanut butter, and vanilla, then mix well.
Working quickly, drop a teaspoonful of the "dough" onto waxed paper, and let cool. This recipe yields about 2 dozen cookies.
Sometimes if I feel the urge I'll add a bit of coconut the mix, as I did tonight. If you'd like to turn this into a gluten free recipe, make sure the oatmeal is gluten free.
